Subject:  Food Preparation and Nutrition

Description of activities:

 

This course will develop a student’s understanding of the following areas:

 

Commodities:

  • Fruit & vegetables, including potatoes (fresh, frozen, dried, canned and juiced)
  • Milk, cheese & yoghurt
  • Cereals (including flours, breakfast cereals, bread & pasta)
  • Meat, fish, poultry, eggs
  • Butter, oils, margarine, sugar & syrup
  • Soya, tofu, beans, nuts, seeds

 

The Key points that will be covered per commodity are:

  • Provenance
  • How commodity is grown/reared & processed
  • Classification
  • Nutritional values
  • Dietary considerations
  • Food science
  • Food hygiene & safety

 

Learning will be assessed by:

Component 1: Principles of Food Preparation and Nutrition

Written exam – 50% of the qualification in summer 2018

 

Component 2: Food Preparation and Nutrition in Action

Two non-exam assessments -50% of the exam in year 11.

 

Assessment 1: The Food Investigation Assessment (15% of the qualification)

Assessment 2: The Food Investigation Assessment (35% of the qualification)

Spring 1st half term

Commodity - Cereals (including flours, breakfast cereals, bread & pasta)

 

Spring 2nd half term

Commodity -  Meat, fish, poultry, eggs

 

Summer 1st half term

Commodity - Butter, oils, margarine, sugar & syrup

 

Summer 2nd half term

Commodity - Soya, tofu, beans, nuts, seeds

 

 

Controlled assessment/Coursework

Theory and practical work will be assessed throughout the academic year at regular intervals.
